-Granny Smith Apples x 4
-Sugar x 1 cup
-Buttermilk x 1 cup
-Olive Oil x 1/2 cup
-Eggs x 3
-Almond meal x 1.5 cups
-Self Raising Flour x 1 cup
-Vanilla Extract x 1 teaspoon
-Lemon juice x 1 tablespoon
-Baking powder x 1 teaspoon
-Nutmeg x 1 pinch
-Salt x 1 pinch
-Oil spray
-Icing sugar (optional) for dusting
Cinnamon Paste
-Brown or Dark Brown Sugar x 1/2 cup
-Cinnamon x 2 teaspoons
-Softened butter or margarine x 2 tablespoons

-Preheat oven to 180 degrees celcius
-Spray a rectangular baking tray with oil
-In a large bowl, mix together buttermilk, olive oil, lemon juice, sugar, eggs and vanilla extract
-Add grated apples & stir
-Add almond meal, flour, pinch of nutmeg and salt + baking powder & stir
-In a separate bowl, make cinnamon paste by combining sugar, cinnamon and butter
-Pour half of apple cake batter into prepared baking dish, then sprinkle over cinnamon paste as evenly as you can.. it will feel sticky and buttery
-Add the rest of the apple cake batter on top and smooth-over carefully with the back of a spoon to try and cover the cinnamon paste
-Bake in preheated oven for 45 to 55 minutes, until slightly brown on top (don't worry if cracks appear in the top)
-Cool cake in tray for at least 15 minutes
-Cut cake into squares, dust with icing sugar and serve

..yes..or coffee! When the Apple Olive Oil cake is baking it definitely looks like a cake and the batter is the same as a cake batter. I didn't call it a slice because this is soft and slices are a bit firmer, but it does look like a slice.. Maybe it's a cross between cake and slice! Like that fine line between a smoothie and milkshake hey? ;) Thanks for popping by. And yes, I did write that as 'pooping' by (before amending it) ;)
